Ingredients:


• 250g of plain flour
• 125g of cold butter, cubed
• 75g of sugar
• A pinch of salt
• 1 egg
• 300g of fig jam
• 2 tablespoons of icing sugar

1. Preparing the Pastry:
• In a bowl, combine the plain flour, cold cubed butter, sugar, and a pinch of salt until it resembles breadcrumbs.
• Add the egg and quickly work the dough into a ball. Wrap it in cling film and refrigerate for at least 30 minutes.
2. Assembly:
• Remove the pastry from the fridge and roll it out on a floured surface into a 30 cm diameter circle.
• Gently transfer the pastry to a tart tin and press it lightly.
3. Filling:
• Spread the fig jam evenly over the base of the tart.
4. Decoration:
• Use the back of a fork to create a lattice pattern on the surface of the tart.
5. Baking:
• Bake in a preheated oven at 180°C for about 25-30 minutes, or until the tart is golden brown.
6. Serving:
• Allow it to cool slightly before serving. The Fig Jam Tart is perfect with a dusting of icing sugar.
